Today is a very gray, rainy and gloomy day here in upstate NY.  But I don’t really mind – I like days like this where you can “hunker down”.  It feels very damp and cold, and I am in the mood to bake something.  I like to bake, especially this time of year, but it’s always a tug of war in my mind because I know if I bake something, then we are going to EAT it.  Do we really need those extra calories?  No, we really don’t. But, what? Am I not ever going to bake goodies again because we’re trying to watch our weight?  Or will I be forever relegated to baking “light” goodies?  Gah.
